When the government’s new Child Care subsidy was introduced, the Westwood family thought that they would be better off. The reality however was that the out of pocket fees for their two children to attend early learning five days a week increased. This is because the amount of subsidised hours offered by the government under the new funding structure decreased by 20 hours a fortnight. Thankfully, the Westwood family’s early learning centre introduced Flexible Hours.  A healthy, sweet treat for breakfast. Ingredients Serves 4 1 egg 1 tsp margarine 1 ¼ cups milk 1 cup self-raising flour 1 tbsp sugar 1 medium apple, peeled, cored and grated ½ tsp olive oil 3 ripe bananas, sliced ½ tbsp honey or maple syrup (optional) Method In a large bowl, beat egg, margarine and milk. In separate bowl, mix flour and sugar and gradually stir into wet mixture until smooth. Fold in grated apple. Heat oil in non-stick pan over medium heat. An easy, tasty Mexican mince packed with plenty of vegetables. Ingredients Serves 8 1 tbsp olive oil ½ brown onion, diced 1 clove garlic, finely chopped 500g lean beef mince 1.5 tsp cumin powder 3 tsp smoked paprika 1 carrot, grated 1 green capsicum, finely chopped 1x 400g tin of kidney beans, rinsed and drained 1x 400g tin crushed or diced tomatoes 1.5 tbsp tomato paste 100ml salt reduced beef stock Method Heat oil in a large frypan on a medium heat.
