It’s 2021 now and within the first few weeks of the year, ABC Cooking organized the License seminar for members interested in pursuing Master level course or obtaining the ABC License. Attractive discounts were offered to attendees of the session and I decided it was the right time to get both Cake and Bread ABC License. I completed both Bread and Cake master courses in September and December 2020 respectively. With the ABC License, I can access all the past and present recipes as well a a detailed video which is very useful because my memory of the steps of earlier classes is indeed quite haz ..read more

From September onwards, there was a semi-renewal of Cake Basic course where 6 recipes were eliminated and 6 new ones are added to the regular lesson line up. This is great because I would have more recipes to choose from! Furthermore from October onwards, virtual lessons are back and this round, it is more attractive than the previous round because now some new and exclusive lessons are offered in the virtual classes! 2 portions of ingredients would be delivered to door step and this time it isn’t merely the dry ingredients. This is definitely a better offering than the previous virtual classe ..read more

July Cake Basic – Premium Roll Cake This is a roll cake using génoise sponge and filled with yogurt cream, canned peaches and mangoes. The flavour theme was summery as peach is a summer seasonal fruit in Japan. This type of cake actually creates a lot of crumbs and may not be the most ideal for rolling, compared to soufflé dough or chiffon roll cake methods. The flavour was more or less predictable and was pleasant if you like mango and peach. The highlight of the recipe is probably on how to frost the roll cake to be perfectly smooth! The technique involved was something different from othe ..read more

This post would be different from my previous posts because I would only be posting about classes I did in March at ABC Cooking. Due to temporary studio closure in April and May, I have taken the opportunity to apply my baking and cooking learnt at home instead! But first, the reviews for lessons I did in March. In the first 2 months of this year, I reduced the number of classes I initially intended to do because of the current situation. I also had to cancel all plans of travelling overseas even though I wanted very much to do some classes. Nevertheless, here’s my review of the classes I did in January and February! I did mostly Bread and Cooking classes and I think now I actually like Cooking course more than Cake and Bread. I started off with liking Cake the most and for the past few months, Bread became my favourite. However I suspect that I like Cooking classes more right now because it has the m ..read more

Last Saturday, I attended a class by Commune Kitchen under their invitation. Commune Kitchen is a provider of cooking lessons, held at OUE Social Kitchen, taught by Chef Payal. Chef Payal has lived in China for a while and has brought back the technique of making Chinese dumplings and Xiao Long Bao, which she teaches in her classes at Commune Kitchen. Other than Xiao Long Bao and dumplings, she also teaches other cuisines like Thai, Middle Eastern or Indian butter chicken, including variants for dietary requirements like vegan or gluten free. I decided on attending the Xiao Long Bao lesson bec ..read more

The year is ending and this is my final post for 2019 about ABC Cooking! In the last 2 months of this year I went for many classes locally and even one class in Malaysia, by buying a single lesson ticket. As it is the festive season in December, many of my bakes are Christmas themed and I had 6 different cakes and breads for Christmas this year! It’s been a whole 2 years since I first signed up for ABC Cooking! From my initial intention to get just 6 cake lessons to now, taking up everything they offer, it truly was not something I’d imagine myself doing 2 years ago! I’ve finish all 12 Wagashi classes and hence I have no more updates about Wagashi course until they renew the menu, hopefully soon. I’m hopeful of that because Hong Kong and Malaysia ABC have renewed their Wagashi course recently! If you’re keen to read about Wagashi class, do look up my previous posts to find out more. I also complete all 8 countries on the ABC Passport ..read more
