A question I get asked ALL the time. There is a lot to consider when it comes to cravings, it isn’t always as black and white as you may think.

This lentil and bacon soup is super easy to make and delicious. It’s a great light dinner option that is very warming and nourishing. You can make this ahead of time or keep it in the freezer in containers to enjoy at a later date.
Ingredients - serves 4
1 onion, peeled and finely chopped
4 garlic cloves, peeled and finely chopped
200g bacon, finely chopped
3 cup carrots, finely diced
3 cups celery, finely diced
1 can of tomatoes
1 can of lentils, drained and rinsed
2 cups spinach
8 cups vegetable stock

I shared a photo of these muffins on my Instagram story last week after I made them and I received so many messages asking for the recipe, so here you guys go! These paleo banana muffins have a delicious peanut butter surprise in them.
Ingredients:
3 large ripe bananas, mashed
1/4 cup maple syrup or honey
1/3 cup coconut oil
2 eggs
1 tsp vanilla extract
2 tsp cinnamon
1/2 tsp sea salt
1 tsp baking soda
1 & 3/4 cups coconut flour
8 tbsp peanut butter

The ultimate vegan comfort food. It’s also a great dish to impress meat lovers with. My hubby can vouch for that, he’s not much of a lentil lover but gave this dish a 9/10!
