Preparation is key to cooking the perfect fried noodles. Using Lucky boat No.2 fine noodles. I soaked them in boiling water for 5 minutes, drain in a colander and cover for 5 minutes. Heat the wok till it’s very hot and add 3 tablespoons of vegetable oil. Turn the heat down slightly and add the onion, bean sprouts and noodles. Stir fry them constantly for a minute so the ingredients combined before adding the dark soy sauce. Stir fry for another then add the salt, msg and spring onion. How to cook takeaway stir fry bean sproutsThe secret to cooking delicious bean sprouts is in the super heat. To ensure every strand of bean sprouts are properly cooked; I first blanched it in boiling water for 10 seconds. Drain and set aside. The wok is then heated till super hot with a couple tablespoons of vegetable oil, the garlic and onion are added first to extract their aroma. Followed by the bean sprouts and rest of the condiments. Chicken green pepper and chilli This dish is the chicken green pepper and black bean sauce without the black bean. Black bean has a unique taste; which is not to everyone’s liking. The red chilli and green pepper compliments well with the chicken breast in terms of colour and appearance. I used fresh garlic and slices of onion for flavour and aroma.
