Today was my first try with Italian meringue buttercream and I’m in love with how these cupcakes turned out!
These are piña colada cupcakes with a pineapple fruit filling and vanilla IMBC. I was going to make a coconut buttercream but I forgot ?
I’ve tried American (too sweet), Swiss Meringue (good but had issues with stability while I’m piping), and Russian (my second favorite but also have trouble with stability). My sister is a pro baker and she suggested I try IMBC since that’s what her bakery uses and what she was taught at school.
