Kimbap without seaweed?

My boyfriend doesn't eat any seafood or anything that comes from the sea (including seaweed). I want to introduce him to kimbap, and I want to find a good substitute for the seaweed so I can still serve it in a rolled format. I was thinking about rice paper as it can be shaped into a rolled format and trap the fillings inside. I also had a very thin rolled omelet in mind, but I'm not sure how to make sure the fillings are trapped inside a rolled format. I understand if the suggestions would be "then he just can't eat kimbap," but I'd love to experiment a bit so we can enjoy the food together ..read more

I went to Jeonju and while walking around Jaman Mural Village, I saw a cafe selling Bibimbap Waffle. I got curious and tried it! The wrap is toasted rice (waffled??
