You get to use the entire pit. The fire box is just below to the right of the pic. Rotation is suggested for longer cooks because the direct heat plates are about 10” from the lower rack, but it handles pretty well… it was a hot day today in Hawaii…

I've been experimenting making my own sauce lately just finished a new one and it was great.
8oz tomatoes sauce
4oz carrot baby food
1 cup vinegar
8oz piloncillo (Mexican brown sugar)
1 tbsp Worcestershire sauce
.5 tbsp cumin
1 tbsp calabrian chili powder
1 tbsp garlic powder
Juice from 1 large lemon
Simmer for 20 min.
My wife bought some chicken breast and chopped pork (for chili Verde). I seasoned it lightly and smoked with hickory. Finished with the sauce. It was a bit loose but sweet with heat.
If you like heat and complex sweetness you'll like it.

Decided to add a wood shelf to the front of my Highland. Which shelf looks better? The first shelf is smaller and fits within the railing of the stock metal shelf and need no bolts to hold down. The second shelf is a little wider and longer but I will have to drill holes to bolt it down to the stock metal shelf.
