Go meatless 1-2 times a week and save on your grocery budget We are not a vegan family, but we do eat a lot of meatless/plant-based meals. It started out as a way to heal our gut and then we just felt so good that we continued to eat meatless for several days a week. (For those interested, I learned about this gut healing through the books of Dr. Robynne Chutkan, Gutbliss being my favorite.) It has also really helped us on our grocery budget because cutting out meat for several meals and replacing it with grains or beans really cuts down on cost! If you’re looking to cut back on some of your ..read more

Man, oh man. I just love homemade granola! I’m not sure who a sudden idea for an invention, but God bless you brother! I love the crunchiness of it. For this particular batch of granola, I used oats, raisins, dried cranberries but you can use any type of dried fruit you’d like. Cheeseburger Pizza

It was love at first sight…me and this cheeseburger pizza. Okay, so Barry and the kids ate some too. We were all quite smitten. It makes you do crazy things and act all nutso. However, the deliciousness makes it all worth the weirdo behavior. And because I love you, I’m sharing the recipe – so that way I won’t be nutso alone. Before you get started, throw your pizza stone in the oven to heat up. I like putting crust on a hot stone. It keeps the crust nice and crispy. If you’re not using a stone, you can throw your pizza pan in there. Actually, don’t throw it…just put it in there nice and gen ..read more

This cake is gone. It went faster than a penny anywhere in a kid’s line of vision. At times, I was afraid Barry was going to carry it upstairs and hide it in his closet. Y’all…it got serious. I thought he was going to fight my Mama for it. But, Annie was watching so everything turned out fine. This simple healthy chocolate cake checks all the boxes: simple, healthy(ish), delicious, chocolate…you know, all the “required” items for a chocolate cake. Let’s walk through how to make it! Honestly, this might be the second best chocolate cake I’ve ever made (behind Miss Sally’s Chocolate Cake). But ..read more

Potato soup is the perfect meal for those cold, blustery, winter days. Add a little spice via Pepper Jack cheese and you’ve got a real winter winner! This is a recipe I got back in 2011 from a friend of ours, Kim. It originally came from her sister, Martha, and we’ve just sort of adopted it as our own. So, let’s make some pepper jack potato soup, shall we?! Basic Ingredients You’ll need potatoes, onion, garlic, celery, pepper jack cheese, sour cream, milk, chopped bacon, and salt and pepper to taste.  We love pepper jack cheese! Maybe it’s because we love hot food…that’s deep. The recip ..read more

Note –> Non healthy recipe ahead! Non healthy recipe ahead! Okay, you’ve been warned. But man alive – some things are just worth it. Amen? I hesitated to even write this post. I mean, there are probably 1 million No Bake Cookies recipes all over the internet. But, alas I found myself making my one millionth batch of these and I took a few pictures. There are load of these recipes and lots of them have very different ratios, so I wanted to post my Mamaw’s version. I’ve seen it a few places as well…and I know it works. And I like sharing stuff that works. Because ain’t nobody got time for du ..read more

Are you looking for a super easy fruit cobbler recipe? Well, just stop looking around and keep reading! This simple recipe is great for fresh or frozen berries, as well as a variety of other fruits. My mom has made cobbler my whole life using this recipe. When I first saw fruit cobblers that weren’t made this way, I remember thinking “That’s NOT cobbler.” I started making it as soon as I was married because it’s so easy and it’s a great dessert to serve to guests, take to potlucks, or even send to someone who needs food – and really, who doesn’t need cobbler? It’s healthy because it has frui ..read more

Homemade Pizza Rolls

I have made fresh bread for our family for many years now, and the recipe I use (the Bread Beckers’ Basic Dough recipe) makes two, one-pound loaves. Depending on the week’s meal plan, sometimes I only need one of the two loaves. Sometimes I share the second loaf with friends or neighbors, and sometimes I use the other dough on something a little different. In this case, I decided to make homemade pizza rolls! This recipe works with any dough recipe that you’d normally use to make loaf bread. You basically need one pound of dough. If your normal dough recipe is something than a single pou ..read more

Why We Choose to Live Debt Free

We’re weird. I’m okay with that. No, really, I mean it. I’m glad we’re weird. It is one of the big reasons you check us out every day. But why are we that way? Why do we choose to look at “normal” and go the other way? Why do we drive cars we can actually afford instead of having payments? Why do we do most of our own construction projects? In other words – why do we do things that “normal” people don’t do? Today, I’ll fill you in. I want to start with three ways we got where we are – the HOW. I believe we have to start there for you to understand ..read more
