This shrimp tikka masala is packed with so much flavor – you’re whole family will love this! What is the difference between tikka masala and regular masala? Tikka masala is typically a cream based sauce, while regular masala relies on many spices to get it’s depth of flavor.  I worked with a woman who was Indian the first time I make tikka masala in 2010.  I told her I was going to lighten the cream sauce. Once she heard that, she immediately said “I think it’s a bad idea” and I couldn’t have agreed more.  It gives it this rich flavor and should not be substituted. Ingredients N ..read more

My late husband would have loved my dinner last night.  Crispy buffalo shrimp tacos! Here’s the thing though – my late husband could not stand spicy food, but somehow when I added the buffalo sauce to the wet better it wasn’t too spicy for him. For my shrimp plate though, I’d always douse them in more buffalo sauce because I puffy heart buffalo sauce anything. When I posted this on Instagram, the first few questions were “can I make these in the air fryer?”  My response is I am not sure, because this is a wet batter.  But if you try it, just let me know? At What temperature shou ..read more

These strawberry lemon muffins are the perfect spring breakfast or snack. Each one is 4 WW points and around 180 calories.  Delish! I recently found Beth from The First Year on Instagram.  You can find her blog here. If you’ve been around here for a bit, you know I don’t bake much.  Because it’s a science.  You need to mix the right ingredients together and you really don’t know if it will work out until after the baked good comes out of the oven. Over the years I’ve made a base muffin recipe that I make adjustments to based on the ingredients I have on hand, and I had stra ..read more

Birthday Cake Donuts

These birthday cake donuts turned out so good! Baking is not my forte, so I looked at a bunch of recipes online to find baked donut recipes. Many of them had yeast and required a slow rise overnight in the fridge, and I wasn’t about that life. Ina Garten had a recipe that was more of a “batter” but when I saw that her 12 donuts had 1 3/4 cup sugar, and a stick of butter, I dramatically altered her recipe. So thanks for the inspo Ina! I bought my silicone donut pan online.  It’s really easy to get the donuts out after they cool.  Fill about 3/4 full.  I tapped the pan down a cou ..read more

This ground pork dandan noodles dish will soon be a family favorite.  Delish! Last weekend my friend Morgan and I went to 88 Marketplace, which is the largest Asian grocery store in Chicago. If you’ve been to H Mart, this is that times 10!  We probably spent 90 minutes in there. When we got home, we made a Dungeness crab stir fry, braised bok choy and pan fried noodles – so good!  As we were packing up stuff for me to leave, she gave me a giant bag of dandan noodles that were leftover from a dish she made for one of her clients. That is how this ground pork dandan noodles dish w ..read more
