I have another simple, delicious, adaptable recipe in store for you today that is ideal for this heatwave. It’s a chilled (I’ve decided it sounds more appealing than cold), cucumber and yogurt soup. I have such strong memories of working at Borough Market on St. David’s Day (celebrated each year on 1 March) and of the huge griddle that would be set up in the corner of the hall for celebrations. Gluten-free profiteroles! Golden, puffed choux pastry, filled with a sweet vanilla spiked cream, crunchy shards of caramel coated macadamia nuts, all finished with a rich, dark chocolate sauce. A total dream of a dessert, choux pastry and gluten-free choux pastry for that matter, is so much easier to make than (I think) people think.
