Check out this cool pizza box display at the newly opened Stretch Pizza in Manhattan. The mini-gallery consists of 19 boxes from my Guinness World Record collection of pizza boxes from around the world. My collection has over 1,800 pieced from 125+ different countries. You can read about the boxes, their artists, and the stories behind the images in my book Viva La Pizza: The Art of the Pizza Box. This display features generic stock boxes, which means none of them are customized for a particular pizzeria. We decided on the theme as a way to keep the gallery cohesive but flexible enough to rep ..read more

Explaining the history and technology of an old coal-fired oven. (April 27, 2008)
Today marks the 15th anniversary of our very first pizza tour. The date was April 27, 2008 and I had never run a tour in my life. I didn’t have any family or friends in the tour business. Nothing in my past pointed to running a tour company or being a tour guide. I actually applied to be a campus tour guide at my university but got DENIED! There’s a test you have to take to become a licensed guide in NYC and I failed it on my first attempt. If I was paying even the slightest bit of attention I would have gone for ..read more

What a blast to be invited back to Live with Kelly and Ryan last week for an in-studio pizza tour! I brought a pizza from each borough to show off some of the city’s delicious diversity. We talked about each slice and grabbed a couple bites across two segments, which you can view by clicking above. This was Ryan’s final food segment on the show and I’m honored he chose to spend it with pizza.
Ryan Seacrest’s Pizza Love
This was my third time on the show. Back in 2018, I took Ryan and the production crew on an actual NYC pizza tour in Manhattan and Brooklyn. I didn’t realize how much fun he ha ..read more

March is Women’s History Month and that means it’s the PERFECT time to celebrate women in the pizza world! We all know that pizza is a male-dominated business, but there are plenty of incredible women working the dough and running the show. People in the pizza biz know that there’s been a recent push to include more women in coverage and media. There’s even an organization called Women In Pizza that supports women in all angles of the business. You can even check out our interviews with women in the pizza business posted during past years.

Our nonprofit Slice Out Hunger completed its annual Pizza Across America campaign last week in honor of National Pizza Day! This is a partnership with the World Pizza Champions, an organization composed of the nation’s top pizza makers. Each participating pizzeria donated and delivered at least 10 pizzas to a local shelter or soup kitchen of their choosing. Slice Out Hunger stepped in to help those pizzerias who needed assistance routing their donations, but most pizzerias managed their own.

What better way to celebrate National Pizza Day than by demonstrating some tips and tricks for better home pizza making on LIVE with Kelly and Ryan?! The segment aired on National Pizza Day. Ryan reminisced about the pizza tour we did together back in 2018, which featured stops at Best Pizza, L’industrie, and NY Pizza Suprema. Kelly was bummed she missed out, but made up for it when I had her literally put the gloves on to make a mess in the kitchen.
We pushed a lot of information into a quick segment, so let me spell out the most important beats with these Top 5 tips for home pizza making. A ..read more

This morning I got a great surprise when I saw that our NYC pizza tours got a fat plug in this year’s NY Times wedding gift guide! Even better, we got mentioned right next to our friends at Ooni, whose ovens have breathed new life into home pizza making. Both make a great gift and both provide memorable experiences. The wedding gift guide quotes a NYC-based couple, who said our tour wasn’t on their registry, but it was “unexpected and fun!”
Here’s a link to the NY Times Wedding Gift Guide so you can read for yourself.

I’ve been writing a monthly column called “Man on the Street” for Pizza Today Magazine since 2011. Here’s a piece I wrote for the October issue about the trend of pizzerias are getting into bagel making. These two foods often get lumped together in NYC because they’re both staples, but the trend is happening more beyond the five boroughs than within. Why are pizzerias doubling down on carbohydrates? Find out more in the column at the Pizza Today Magazine website.

Join two of my greatest pizza mentors and me for a 3-day intensive pizza class Nov 30 – Dec 2 at Pizza University in Beltsville, MD. “Start Smart” covers all the basics of pizzeria operation, so it’s great for anyone thinking about opening a pizzeria. Our curriculum includes culinary basics for both Neapolitan and New York style pizza, plus business essentials. I’ll be co-teaching with John Arena (Metro Pizza in Las Vegas) and Giulio Adriani (Slice & Pie, Forcella, Pizza Cake). Whether you’re dabbling with the idea of jumping into the pizza biz or you’ve recently opened, this class is per ..read more
