Stove Top Beef Stew
Iowa Girl Eats

I have something slightly controversial to say but I’m just going to say it: I dislike — nay, loathe — chunky beef stew. The aversion is a result of being served a few too many pot roasts with dry meat and soggy vegetables as a kid (sorry Mom!) Unfortunately beef stew became guilty by association and was lumped into the “hard pass” recipe category for many years. Thrilled to say we’ve got a work around and that the ingredients in my Stove Top Beef Stew are not only easily scooped up with a spoon (keep your knives, pot roast!) but melt in your mouth tender. This version of beef stew is really ..read more

Last month a few friends and I headed out for dinner and drinks followed by a comedy show featuring the one and only Trey Kennedy. He was SO funny! I didn’t know if a sketch comedy-style guy would translate into a good stand up comedian, but he nailed it. You also have to appreciate when a PG-themed comedian can get an entire audience rolling without uttering a single swear word. This is a talent I do not possess. Anyway, 10/10 + two thumbs up + highly recommend! One of my friends and I were discussing the show the next day and she said, “…it felt so good to LAUGH” and that hit me right ..read more

Happy new year — I hope you had a fabulous end to the holiday season! Ours felt fuller then ever before — in slightly stressful ways (does crying in your car prior to a media event count as being stressed out?!) but also in truly wonderful ways. We took Gwen and my niece to the Nutcracker ballet, my Mom and I took in a Christmas Eve-Eve Mannheim Steamroller concert, Ben and I hosted our first holiday party, and I played so much Amy Grant that Gwen memorized the lyrics to Tender Tennessee Christmas, bahaha. All that said, I was excited to get the house turned over, cleaned out, and welcome the ..read more

Roasted Garlic and Prosciutto Cream Cheese Dip with Hot Honey

I grew up thinking there was no such thing as bad pizza (I mean, even subpar pizza is good pizza, right? It’s PIZZA!) until I was diagnosed with Celiac Disease. Gluten free pizza crust often leaves a lot to be desired in the taste and texture department, as evidenced by the gluten free pizza I recently had at lunch with friends. The crust was thin, but impossible to cut through at the same time. Kind of like cardboard? However, the toppings on that bad boy were unforgettable. The description of white sauce, roasted garlic, prosciutto, parmesan cheese, oregano, and hot honey on the menu made i ..read more

Gluten Free Chocolate Chip Cookies (With Video)

Anytime someone asks me what I do for a living, I jokingly tell them “I share gluten free chocolate chip cookie recipes on the Internet.” I mean, this explanation is not not true, and it usually works when trying to describe my crazy job to someone I’ve just met! And now, it’s technically true. Sure, I have recipes for Almond Flour Chocolate Chip Cookies, and Brown Butter Oatmeal Chocolate Chip Cookies here on IGE, but a tried and true, classic Gluten-Free Chocolate Chip Cookie recipe has been missing…until now. Friends, say hello to the last chocolate chip cookie recipe you’ll ever need ..read more

Gluten Free Lasagna

The first time I ate gluten free lasagna after being diagnosed with Celiac Disease, I knew that everything was going to be OK. It’d been years since my last hot and cheesy scoop, and I felt like someone who’d just been handed a jug of water after wandering through the desert for days. I could practically feel the powerful combination of cheese, meat, noodles, and sauce coursing through my veins. Who me? Dramatic?! Seriously though, if living gluten free and being able to eat lasagna can coincide — is there much to complain about in life? Especially when it’s made from a handful of everyday in ..read more

Anytime I test a new recipe, I jot down my thoughts while cooking and eating the dish, including what I feel its best qualities are. Let me tell you — the list for Crock Pot Chicken Tortilla Soup goes on and on! Recently Ben declared that Chicken Tortilla Soup was going to become his new signature dish (RIP Ben’s Beef Stew?!) and he was going to find the most elaborate, time consuming way possible to make it. To know my husband is to understand that he not only embraces, but welcomes, the suck in pretty much any situation. His version, he shared, will involve smoking a chicken then making hom ..read more

Easy Instant Pot Chicken Stock

Your honor, I confess to buying an Instant Pot on Black Friday 2019, only to let it sit in my pantry untouched for 2 whole years fearing the lid might somehow detach itself during the cooking process and shoot like a rocket through the roof of my house, taking my hand with it. I also confess to unboxing it only after thinking my stove top/oven was broken (spoiler alert: it wasn’t), finally reading the manual, and realizing an electric pressure cooker couldn’t be simpler to use. I plead guilty and accept a lifetime sentence of making easy Instant Pot Chicken Stock to use in all my homemade sou ..read more
