Following two years of renovations and a $3.5 million investment, Prime Hot Potopened on Thursday, February 8 in Tustin at the District, one of Orange County’s largest outdoor shopping centers. The 11,000-square-foot space seats up to 200 diners across the main dining room and five private areas. This is the first U.S. location of the luxury hot pot chain that originated in Sichuan, China. Best friends Shelly Lin and Carmen Seetho met in the U.S. after immigrating from Indonesia and Singapore, respectively. I was invited to get a sneak peek at Gram Cafe before they opened to the public. It was so interesting getting a behind the scenes look at all the work that goes into making the famous pancakes! Gram’s souffle pancakes are a cross between pancakes and a French souffle. They taste lighter than a traditional pancake and have a custard-like texture. The Monterey Park location currently offers the original pancake, along with flavors such as durian, matcha, and strawberry. More offerings will be added in the future.
