A great way to use summer vegetables that can be served alone as a light meal, or to complement a main dish.
Ingredients
2 tablespoons olive oil
1 lg red onion, chopped
3 cloves garlic, minced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
2 med eggplants, diced
2 med zucchini, diced
2 potatoes, peeled and diced
2 lg cans San Marzano tomatoes
Salt and pepper to taste
Fresh basil leaves, torn, for garnish

Italy has celebrated Liberation Day (Il Giorno della Liberazione) since April 25, 1946; the annual tradition marks the end of the Italian Civil War and the end of the Nazi occupation in 1945.
Technically, not all of Italy was liberated on April 25th.
With Nazi Germany on the verge of collapse, Italy’s resistance called for uprisings across major cities — the first of which took place in Bologna and Genoa on April 23, and then Milan and Turin were liberated two days later.

RIPLEY, Netflix’s new hit series, based on Patricia Highsmith’s psychological thriller, “The Talented Mr. Ripley,” has fans flocking to the sun-drenched Amalfi Coast, where much of the show was filmed.
The streaming series is driving traffic to one particular cliffside town, Atrani, a tiny municipality and comune with a local population of fewer than 1,000 people.

2 9 oz. packages fresh fettuccine
1 1/4 lb. asparagus cut into one inch pieces
2 cups heavy cream
12 Tbsp. butter
pinch of nutmeg
salt and pepper to taste
1 1/2 cups freshly grated parmesan
Serves: 6
