Harvesting flat oysters Always want harvesting flat oysters? Haydn, one of our Oystertainers who recently moved back home to start Red Oyster UK,  has been working on a Dutch oyster farm in Yerseke, Zeeland, The Netherlands, to get a feel for the European oysters. Zeeland is a conglomerate of several islands, peninsula’s and rivers like the Eastern Scheldt, with Yerseke sitting on its coast.  When the oysters are harvested, they are stored in a so called “wet warehouse”. It’s a large cement basin, over one hundred and fifty years old. After being harvested, the oysters are kept in ..read more

Why eating oysters increases your happiness
Red Oyster USA

Why does eating oysters increase your happiness? There aren’t a lot of food products that stir up the conversation the way oysters do. Say oysters, and all sorts of associations come to mind. We like to joke about oysters, and wink playfully while alluding to the effect of oysters on our love life. It would be a cliché to assume it’s men who think that way; women play the ‘oh-la-la’ card just as well. Although the effect oysters have on our libido has never been scientifically proven, the rich amount of zinc influences our level of dopamine. Dopamine is a “happy hormone”; it brings about a f ..read more

R is for Oyster Do you know the saying that you can only eat oysters in the months with an “r”? It’s an old story and there are different versions. We personally like the story of Louis XIV of France who loved oysters. Everyday the horse carriages went fully loaded with oysters from the coast of Brittany to Versailles. The road was long and in summertime it was very hard to keep the oysters cool. Because of this the quality decreased and the Royal family got sometimes sick. They made the decision to only eat oysters 8 months (“huit mois”) of the year. That’s why t ..read more

The Oyster, an amazing creature In many ways, the oyster is a remarkable creature. It cannot walk or swim, it is a hermaphrodite, and it is – unlike other shellfish – built asymmetrically. According to evolutionary theory, organisms change over generations. That’s not the case for the oyster, it is timeless. She has been the same for centuries, both in shape and anatomy. As small as the oyster is, her influence is huge. She filters the water, she is one of the greatest sources of protein, and she is an inspiration to numerous creative minds. It’s gnarled shell, the pearl-clad interior, the p ..read more

Tarbouriech oysters; a unique breeding process An invitation from Tarbouriech oysters to come to Venice is something you don’t have to think about for long. Certainly not if you are taken along by the oyster grower himself. At 7:00 in the morning our founders flew from Amsterdam to Venice. Our contact Giorgio was already waiting for us and 1.5 hr later we arrived in Porto Tolle, in the bay of Scardovari. The closer to the origin the more exciting it gets. Or as Matijn says: “It has to hurt to get somewhere otherwise it has no value.” And value it has when we drive on the road around the bay ..read more
