On one cover (2012) I view a straw placed into a glass of dairy and on the other cover (2013) I view from the topside a well baked apple tart. What are the differences between both books/recipes????? Any major differences ..read more

Was wondering if anyone could recommend books/authors in the subject of cured meat? I have a few from Ruhlman, the Marianski Bros, and Steven Lamb who all seem to have big followings and respect - however, I've heard stories that Ruhlman has had to revise his books in the past because some of his recipes had been deemed relatively unsuccessful and unsafe ( my only cirticism of his recipes is that they tend to wander far off the 'traditional' path from time to time. Grand Diplome Cooking Course

An unexpected Christmas gift this year was a complete 20 volume set of the Grand Diplome Cooking Course books. These are like never used, and appear to be from about 1971-2 time frame put out by Danbury Press. A friend got them from an estate sale for about $5. I've seen them used on eBay for about $60. Anybody know anything about these? Are they any good? Appear to have been put together by a couple of women chefs from Le Cordon Bleu newsletters I read somewhere. thanks! doc ..read more

Hi, I'm looking for french style pastry book that does simple french/euro type desserts like madeleine, choux, simple french cakes, financier, frangipane, gateaux de voyage/ travel cake and other simple items along with different flavour combination if they have it. I don't want to do laminated doughs and entrement cakes with multiple layers of brownie/cake, gelee, crispy layer, mousse etc.. it too labour extensive and time consuming for one person, so I rather not do those type of baked... french style pastry book ..read more

This Humble Bundle is from Adams Media, who you probably have seen with their Everything ** where ** is some particular cuisine or technique. I've enjoyed a few different ones over the years, Thai, Indian, Mexican, Chinese and so on. Generally they're a bit simplified in my experience though they've always had some keepers.
