For a long time I’ve been wanting to write. Write about the million random things on my mind as someone who is in her late 30’s. How I’m trying to feel like myself again after two kids, the challenges of juggling being a mother to two small children while also needing to do things for parents, and in laws. I’m going to start by saying this salad is heavily inspired by the version on Smitten Kitchen I tried many years ago and became obsessed with. Over the years I’ve made my own small tweaks, shortcuts and ended up with what I’m sharing with you all today.
When I’m hosting and want something sophisticated, green forward and crave-worthy- I find myself making this. I prepare everything separately and right before serving- toss it all together. I always get so many compliments on this because of the well rounded out flavors!

This recipe is a true example of how the right minimal ingredients can come together for a truly complex and flavorful meal that is both satisfying different. I leaned in on bold flavors like spicy smoky Harissa and creamy tart Feta to make this pasta comforting with every bite! I LOVE a good breakfast potato- they’ve gotta be flavorful, cut just right into small cubes, with a nice outer crisp and fluffy inside! I also don’t want to chop a million things so early in the morning so besides the potatoes- its just an onion and a bell pepper to compliment all the flavors- not too bad! The shortcut here is using taco seasoning because its quicker than reaching for a million spice jars- and it has all the spices I probably wouldve added on my own anyway so win win situation!
