I promised some recipes, so here is the first. These are true to the name and good and spicy, but not killer. The cheese helps moderate the capsaicin. What you end up with is nicely intense and very true to jalapeno poppers. I made these for the second time just yesterday/today. Rather long prep, but well worth it and makes enough for a party or to last a while. I froze and then thawed some with no issues the first time. Had some nice big Jalapeños in the fridge so decided to make a few poppers. Mixed a brick of cream cheese, 6 oz. Cotija cheese and 1/2 TBSP Tajin seasoning together, filled the peppers and topped with some pastrami. Cooked them on the Pizzazz rotating pizza oven I got the wife for Christmas. Everything Cheese Balls Mix 8 oz. softened scallion cream cheese with 1 cup shredded dill havarti, 1 tsp. Worcestershire sauce, 1/2 tsp. grated lemon zest and a few drops of hot sauce. Everything Deviled Eggs Peel and halve 12 hard boiled eggs. Scoop out the yolks and mash with 1/4 cup each mayonnaise and softened cream cheese, 2 TB. Everything Seasoning, 1 to 2 tsp.
