OK, need some help here. Came across a photo of mine from 2017. As you can see, I've hollowed out the Jalapeno and then stuffed a shrimp inside. THEN WHAT DID I DO???? Can anybody help? I have no idea and cannot find a recipe in my collections, at least not so far. I'm pretty sure I did not deep fry them because that is something I rarely did/do, even 7 years ago. It also does not look as if there is cream cheese in there as well, but that could be because I just hadn't gotten to that... Read more ..read more

his will be my first post since joining the group. I know not everyone is a fan of escargot, but it is something I have enjoyed having served to me in the past and I wanted to try my hand at recreating it. I am new and not sure about the rules, but I find a lot of inspiration on Youtube. I found Chef Ludo's recipe in a video there and then also found it on the Internet. https://www.ludolefebvre.com/recipes/escargot. I believe the snails and herb butter sauce turned out great and when I... Read more ..read more

I like twice baked potatoes, but my favorite is stuffed, fried potato skins. Some times we will have an appetizer meal with skins being one of the stars. For basics, I like bacon, cheddar cheese, pickled japs, sour cream and hot sauce. Pulled pork with sauce and a white cheese is also great. Mexican fillings, especially chorizo, cotija and salsa. How do you like your skins ..read more

I made special chicken nachos today. Stewed chicken in pico de gallo. Monterey jack on top of the chicken. And then I made a sour cream enchilada sauce and topped the nacho and put them in the oven. A long time ago these are my favorite type nachos at a restaurant that no longer exists and nobody else does them unless you tell them how. The sour cream enchilada sauce has flour and chicken broth and butter and then turn the heat off and add the sour cream. Of course you top it with salsa or... Read more ..read more

Need chef opinion on flambe

So here in Texas, a lot of Mexican restaurants offer a flambeed queso. It's white cheese which is often just monterey jack, heated and a shallow oven proof dish until it's melted. The kind I like is called hongos con queso and it has poblanos and mushrooms in it. Another type has chorizo. At the table they pour some clear liquor on it and light it. I've had this different places over a number of years. I once asked what kind of liquor it was and it was some kind of really raw liquor and... Read more ..read more

This can be anything that you love, but no one else in your home will eat. It can be a sandwich, a can of Vienna Sausage, Head Cheese, stinky cheese, potted meat, well, you get the idea. Here are some of mine. Suffice it to say that I ate at my paternal grand parents home enough times to be introduced to a wide variety of foods. 1. Liverwurst (braunschweiger), straight up,or especially on toasted rye with lettuce, tomato, sweet onion, and Miracle Whip 2. Head cheese sandwich 3... Read more ..read more

What makes a kosher pickle kosher?

This subject has probably been covered ad nauseum here, but what makes a kosher pickle kosher? Mom swore up and down that Kosher pickles contain no vinegar. She says she learned this from her bubbeh. Some articles on the web claim that garlic makes kosher pickles kosher. I know, of course, that for a food to be considered “kosher,” it must be prepared and packaged according to the laws. That’s not what I’m talking about. So, what exactly is a “kosher” pickle ..read more

My Salsa: My onion was small so I used all of it. I hollowed out the jalapeño seeds and membrane. ***I rolled the lime on the cutting board before cutting it, it releases the juices. *** I poured some salsa in a bowl and added another thinly sliced jalapeño to it and refrigerated it, since I like salsa hotter. Salsa: Ingredients: 1-(28-oz.)-Can Whole Tomatoes With Juice 2-(10-oz.)-Cans Rotel Diced Tomatoes & Green Chilies 1/4 Cup Chopped Onions 1 Clove Garlic, Minced 1... Read more ..read more
