How thick do you like your lentil soup?

Im up late (or early) and looking at a bunch of crap on the internet. I came across a Shortt video recipe for lentil soup, so I figured I'd take a look. Everything looked good, but the finished product looked more like a bean side dish than a soup. The beans were literally mounding way above the minimal liquid. I'm sure if not eaten immediately, the beans will absorb whatever liquid is left. I guess everyone has their own preference, but I prefer more of a soup when Im eating soup... Read more ..read more

We had a really nice asparagus soups tonight. It started with lemon garlic croutons, using cubed bread, ww sprouted bread, then blending garlic, lemon, water, rosemary, pouring that over the bread cubes, baking at 300 deg F for 40 minutes to an hour on parchment. The soup is a diced onions, some garlic, in water, then veg broth (I use a powder I made with water), then processed cooked asparagus from this summer, and some rosemary. No salt. Posted the pic to this recipe in the "What's for dinner Thursday 2-4" thread and had a request for the recipe. Luckily someone else on a different board had asked the same thing about a year ago. I never had a recipe, just notes from my Mom since this is her recipe. I looked through the bean soup recipes here and I didn't see one just like hers, so I though I would pass along. For me soup season is every day of the year, but now with the cool weather settling upon us, It seems fitting to incorporate soups into our weekly menu. I would really appreciate recommendations for hearty, healthy chicken noodle soup recipe recommendations that are not too difficult. We often bake a whole chicken, but just the 2 of us rarely eat it all, so we end up with leftover chicken in the frig. I'd like to make soup like mom used to do. She's gone and so are her recipes, if she even used any. I'd like to include veggies, not too much salt, and probably little or no garlic. And the thicker the better -- heavy on the "hearty". ?
