So my church has a chili cookoff next Saturday and I am theory crafting a recipe for it. Here is what I have so far.:  Smoked pulled pork with traditional pork rub Roasted sweet potatoes with paprika, cinnamon, and nutmeg for seasoning Black beans Roasted jalapenos Beef broth mixed with apple cider vinegar and molasses/brown sugar (with seasonings like salt, pepper, paprika, cinnamon, and nutmeg to taste) I'm thinking of a roughly even ration between the pork, potatoes, and beans. Trying this wonderful recipe (blocked with glove to protect copyrighted info) from America’s Test Kitchen with a hack for top cook chili you guys have been posting.  We are mid cook!  So if it fails it fails but feels good so far.  Browned the veggies in the CIDO direct. Then put the grate on the hook and pulled the plate setter out from it’s hanging wires under the table.  Will do a few posts to try to keep pics in order.  Egg temp while direct was ~325 and indirect targeting 250-275.  Will put the turkey patty in the chili once it gets to 160 internal or so.&n ..read more

Alright before I post this, just want to give a shout out to @JohnnyTarheel and @NDG who have both provided most/all of the info I'm using here.  Starting my own post to log this cook, getting ready for what will be an amazing Superbowl weekend!! Yesterday turned chilly in our part of Florida so I decided it was time to break out some Lodge cast iron for a late brunch. I was gifted a pound of sausageby my egging neighbor as a thank-for taking care of his dog and pool over the Christmas holidays.  I heated up some cast iron, sliced up the sausage, and fried it in my large egg. Then I fried two eggs in the egg on the small CI. Brunch was served. I put the remaining cooked sausage in the refrigerator to keep it for later. Decided to make an updated version of my fiancée's dad's (also from Indiana) chicken chili for football Sunday. Started on Saturday night with a pot of Rancho Gordo pinto beans soaked in water with 2 Tablespoons of kosher salt, overnight. Sunday morning, drained and rinsed the beans, then simmered them in chicken broth with a jalapeño, a whole head of garlic and a shallot (each halved) for 45 min. to 1 hour, until almost al dente. Whipped up some chili last night. I'll post pictures later today. I took a variation of some "over the top" recipes I browsed on the forum. I didn't measure anything so this is going to be best guess. I also used home-made tomato sauce and fresh peeled tomatoes from our garden...so the amounts again are best guess as far as canned volumes go. This chili had good flavor, but not much heat. The flavor from all fresh tomatoes was insane. Slightly sweet because I added some crushed cherry tomatoes from the garden as well. The hunks of meat are huge.
