Dum Aloo

Dum aloo is one of my favourite veggie curries. I first tried dum aloo at a friend’s wedding. The catering company made it with small new potatoes and I loved it. It wasn’t until years later that I tried it again. That time I was on a stag do somewhere in London. It’s all a bit of a blur now, but I can remember that curry as if it was yesterday. A huge karahi was brought to our table filled with deep-fried whole potatoes in a thick red sauce. This is my version of that dish. I just wish I could remember where I had it.   What is dum aloo? Dum Aloo is a popular and flavorful Indian dish ..read more

Saag Recipe

This Punjabi saag recipe is my favourite version. Try this! There’s just something about a good saag. You can serve it just like this or add other ingredients I promise, this saag recipe is one you need to try soon. I liked it so much, I featured the recipe in my book ‘The Curry Guy One Pot’. It’s easy to prepare and tastes great simply served over white Basmati rice but there’s so much more you can do with this saag.  What is saag? When you think of the word “saag” you might think of a creamy spinach dish you get served at Indian restaurants. “Saag” is a term used in Indian cuisine that ..read more

This is a Punjabi rajma recipe not to be missed! In my cookbook ‘The Curry Guy‘, I featured a Punjabi rajma recipe that I learned from my good friend, Bob Arora who is the own and chef at Sachins in Newcastle. Together, we cooked the rajma recipe live together at the World Curry Festival in Bradford in 2014. That recipe has been my ‘go to’ rajma recipe for many years but now I have a new rajma for you. You’ll find this one pot, vegetarian curry to be rich, creamy and out of this world delicious. The homestyle rajma ticks all the boxes for what makes a great curry and is comfort food at its bes ..read more

This butternut squash curry is so good and easy to make too! My wife and I learned this butternut squash curry recipe while travelling around Sri Lanka. We visited a little restaurant called Inspire. It only had a few tables but the food they put on those tables was out of this world amazing. The owner and chef offered to show us this butternut squash curry recipe, which was actually prepared using green pumpkin at the restaurant but butternut squash works well too and is an easy alternative. No frying! This healthy curry is one of my favourite veggie curries. About this butternut squash cur ..read more

Aloo gobi done restaurant style! This one you have to try! This aloo gobi recipe, a Cauliflower and potato curry, is delicious served as a side dish or main course. The famous curry is hugely popular in India but here I wanted to give you the British version. This is just like the amazing aloo gobi curries you find at the best curry houses. The recipe is slightly different to the original as a curry house style base sauce is used which gives the aloo gobi a smooth sauce that is to die for. So good served with an cold beer! How to get this aloo gobi recipe right… So many of my vegetarian ..read more

Saag Paneer

Simple and delicious… You’ve got to try this saag paneer recipe! Saag paneer is such an amazing curry! I just love it. This is also one of my favourite saag paneer recipes. You could just add the paneer raw but in this saag paneer you marinate the cheese overnight and then fry it. This takes the saag paneer to a whole new level. So easy to make… This is one you’ve got to try! Which spinach should I use, fresh or frozen? I am a big fan of frozen spinach. It is washed, cooked and then flash frozen to keep all the goodness in. You could also use fresh spinach but many studies say that the froze ..read more
