Ingredients:
1 lb fresh walleye filets
sea salt
cracked pepper
1 lemon
1 fresh dill sprik
1 fresh thyme sprig
1/2 stick of unsalted butter ( 4 tbsps butter )
2 cloves minced garlic
1/2 minced red onion
1/2 cup dry white wine
Directions:
Season your filets with sea salt, cracked pepper, lemon juice and zest from your lemon, and half of your minced garlic and red onion. Gently lay 4 thinly sliced lemon slices over your filets. Cover and refrigerate until ready to cook.

Ingredients:
3 large dried chilis ( I used 2 ancho and 1 pasilla pepper here )
1 small red onion chopped
2 minced garlic cloves
2 tbsps tomato paste
1/4 cup boiled chili water
Directions:
Rinse your dried chilis and pat dry. Boil 1 quart of water or enough water to completely submerge your chilis.
Place your chilis in a heat proof bowl and pour boiling water over them. Make sure they are submerged and let them sit for 10 to 15 minutes
Remove from the water and pat dry. remove the stems and coarsely chop your chilis.

Ingredients:
2 cups coconut milk
6 Tbsps chia seeds
1 Tbsp honey
1/2 tsp cinnamon
1/4 tsp salt
Directions:
Combine all your ingredients in a sealable jar, tighten the lid and shake to incorporate. Place in the fridge for 2 hours.
Remove from fridge and stir ingredients together well to remove any clumping of the chia seeds and replace in the fridge for 12 to 18 hours.

2 Tbsps ground flax seed
5 Tbsps water
8 oz chopped mushrooms
1 fifteen oz can of chickpeas
salt & pepper to taste
2 Tbsps tomato paste
1 Tbsp soy sauce
1 Tbsp olive oil
1/2 cup bread crumbs
2 minced garlic cloves
1/2 cup chopped red onion
1/2 cup chia seeds
Directions:
Make your flax egg by combining your ground flax seed and water. Mix together and set aside.

1/2 cup olive oil + 1 tbsp olive oil
1 Tbsp red pepper jelly

O’s and Oats
3 cups cinnamon oat crunch cheerios ( or whatever your favorite cheerio happens to be )
2 tsps vanilla ( I use non alcoholic for this recipe )
1/2 cup almond butter ( or nut butter of choice )
1/4 tsp sea salt
1/4 cup honey
1 cup rolled oats
Cottage Cheese Mixture
1 cup cottage cheese, whipped
1 tsp vanilla ( again I used non alcoholic )
1 tbsp honey
Note: I recommend eating these chilled out of the freezer as they will have an amazing almost ice cream like texture due to the cottage cheese.
