But why use processed meat when you can cook a whole rack of St Louis cut ribs, remove the bones and throw them between some bread?
The cut is important here. St Louis (or Kansas City / Competition) cut ribs are much meatier than the average baby back, and are a fair ..read more

The Dish:
Kebab, gyros, souvlaki – often terms used interchangeably in Australia for the classic Mediterranean lamb and salad wrap, but they are actually different methods.
The easiest for home cooking, and the one I’ll focus on here is the souvlaki – marinated and cooked on individual skewers and served on simple homemade flat breads with a freshly made tzatziki.
The Cooker:
Traditionally, these are cooked over charcoal, however you can still get a great result on gas, and that is what I will be cooking on today.
Aim for a medium-high, direct heat. I like to use the Weber Kabob rack&nbs ..read more

Beer Can Chicken!!
The Dish:
Beer Can Chicken: words you often hear together in the barbecue world. Some say it’s overrated, others have methods they prefer, but I think it’s one of the best ways to guarantee a tender, juicy and delicious bird that will keep both dark and white meat fans happy.
