Use your favourite recipe to make either a cream based or non-creamy tomato soup. Both work very well to create an irresistibly smoky tomato soup that is mouth-wateringly delicious, right down to the last spoonful!   Replace a portion of the stock with strongly brewed Lapsang Souchong tea. To make 1 liter, use 3 cups of stock, and 1 cup of Lapsang Souchong tea. To make the strongly brewed Lapsang Souchong tea, use 3 tbsp. of tea to 1 cup water. Bring water to a full rolling boil. Steep 5 minutes and strain. Then pour the brewed tea into the soup pot, along w ..read more

Conquering the Daylight Saving Time Change - Secrets of a Former Night Owl

by Tea Master DANIELA CUBELIC One side of my family are hard-core night owls. When I was younger I wondered if they were secretly vampires, because for them, noon is still “early in the day” & they seem to come alive after the sun sets. I inherited these traits & assumed that feeling lethargic & groggy for most of the morning, but finding it hard to fall asleep until well after midnight was what everyone had to deal with. For over a decade now, I've found it easy to wake up early, feeling refreshed & energetic without an alarm. By resetting my daily habits, & developin ..read more

London Fog Chocolate Chip Cookies

by Tea Master DANIELA CUBELIC  Tea is a scrumptious, unique & creative way to enhance the taste of desserts, including something as classic as a chocolate chip cookie. The easiest way to bring the flavour of tea into baked goods is to work with recipes that use water as a primary ingredient (rather than just oil or fat). The reason is that tea releases its flavour most effectively into water. While it’s possible to infuse tea into oil, it requires a much longer steeping or infusion time & a dramatically higher quantity of tea than when you are brewing tea in water. Even ..read more

Using tea is a fabulous way to flavour soups, as you’ll discover from our selection of tea soup recipes. Tea can substitute for broth, or be added along with broth. It adds complexity & delicious flavour while also boosting nutrient value. We love creating our own recipes for tea-based soups, but you can also experiment by using tea in your favourite soup recipes. When doing that, simply use brewed, strained tea where the recipe calls for water or broth. Usually it’s best to make the tea a bit stronger than you might otherwise. That’s exactly what we did with this recipe. The original is b ..read more

By Tea Master Daniela Cubelic  This couldn’t be simpler or more delicious—instead of using water to make hot chocolate, use brewed tea. The result is a better tasting, more decadent hot chocolate that is also healthier - with less sugar, fat & calories. Adding tea to your hot chocolate is the best of all worlds! The tea provides a rich flavour & complexity which allows you to use less hot chocolate powder or cocoa than usual. Better still, even with less hot chocolate powder or cocoa per cup, you actually get a more gourmet taste. Tea can also be a nutrient den ..read more

Next-Level Jasmine Rice

by Tea Master DANIELA CUBELIC Jasmine rice is renowned for a delicate floral aroma that is reminiscent of jasmine. You can take your jasmine rice to a heavenly level by cooking it with jasmine green tea. Foodies in Asia seek out special varietals & fresh harvests of premium jasmine rice, which are more fragrant, to maximize their enjoyment of this wonderful scent. The scent comes from a naturally occurring compound in the rice (2-Acetyl-1-pyrroline), but it deteriorates quickly as the rice loses freshness. I love freshly harvested jasmine rice, but it’s almost impossible to get in Nor ..read more

Craving salt & vinegar chips? This dish is a healthier way to do it. Potatoes are oven roasted in tea-infused vinegar, instead of being deep fried. The tea enriches the vinegar with benefits & delicious flavour, but it results in a satisfying taste combination perfect for snacking or as a side dish. Great combinations for this recipe include: pine-smoked Lapsang Souchong tea for a smoky taste, Mango Shade tea for a zesty chip, Herbal Chai for spice lovers & Imperial Earl Grey or Earl Green for a tantalizing deep orangey note. These are mouth-wateringly good when served hot out ..read more
