METHOD Preheat oven to 350 degrees F. Place the pecan pieces on a baking sheet and roast for 5 minutes. Remove from the oven and allow to cool slightly. Place the pecan pieces, kosher salt, and cinnamon in a food processor. Process on high speed for about 1 minute until crumbly, then scrape down the bowl. Process again for about 1 minute until creamy, then scrape down the bowl. Process for another minute or two until completely creamy and smooth, scraping as necessary.
