Dice a red onion and fry in a knob of butter or ghee, Add 1 tsp of each ground cumin, ground coriander, ground fenugreek and turmeric to the pan and coat the onions. Throughout the first two weeks of March 2024, the streets of Valletta have sustained the buoyant click-clacks of close to 1,500 PhD and Master’s graduands.
