  Scott sent me an e-mail last week wondering if I'd like to join him on a couple of local BBQ day trips.  Silly Scott. Of course!  I am always ready for more BBQ, even when I have about 10 lbs of excellent home smoked brisket in my fridge.  This was the first of 2 planned trips.  This time we headed out about 10 am to hit joints in Mabank, Forney, and Garland.  If everything aligns, we will be headed west next week to Aledo, Cresson, and maybe elsewhere.  Individual joints will be reviewed below.   https://intrinsicbrewing.com/ sampled about 1:15 pm This was or final stop for the day and the rain was still coming down pretty good when we pulled up.  We made it inside without melting and found ourselves to be the only BBQ customers.  This is a combination brewery and smokehouse (great idea that I would love to see more often) and the other customers were there for the brews.  I grabbed a Texas Trinity once more and found a nice brown ale at the bar to go with my BBQ.  The brisket was tender with a crispy crust on the outside but not a hint of smoke flavor.  ..read more

  This was the first of 2 briskets we smoked this week.  These had been sitting in my wife's nephew's industrial freezer at minus 20 degrees since last fall when my Mrs bought them on sale for $1.97/lb.  This one came in at just under 18 lbs before trimming, but I carved off almost 5 lbs of fat before it was cut in half, seasoned with Green's All N 1, and slapped in the smoker.  After 7 hours in the smoker with live oak and pecan wood, we popped it in the oven for another 5 hours at 250 degrees.  We took it out of the oven at 11 pm with a near perfect internal tempera ..read more

  sampled 3/7/24 about 1 pm Two days ago we ate at The Original Roy Hutchins BBQ in Trophy Club. Today we found ourselves nearby the original, original, Hutchins BBQ in McKinney so we decided to stop by to compare.  Our meal on Tuesday was excellent and today was more of the same.  The fact that it is the same family and they use the same recipes doesn't always mean the same quality, but today it all worked.  I had hoped to try the beef hotlink but found that was a weekend only thing.  I had to "settle" for a jalapeno cheddar link and that was excellent.  The bri ..read more

  sampled 3/5/24, about 4 pm We have a friend in town this week and he was getting together with another friend who liked BBQ.  We suggested giving Roy Hutchins another try, but I warned them the last time I had visited that the ribs were awful.  Based on my previous experience, I loaded up on Texas Twinkies and pork belly bites, but I also got one rib just to see if things had improved.  Indeed, they had.  My one rib was tender and juicy and left me wishing I had ordered more.  Next time I will.  The Twinkies were awesome and the pork belly bites remain alm ..read more
