Hot Fries Chicken Over Rice. We adapted a classic New York style halal-cart food, kicking up the flavors with our Hot Fries Rub. (The below recipe is modified from Serious Eats)
Ingredients
Hot Fries Chicken - grilled and chopped. See recipe here. We recommend cooking the chicken tandoor-style in a Kamado grill.
For the rice:
2 tablespoons unsalted butter, plus an extra 2 tablespoons to mix into rice after cooking (optional)
1 teaspoon Hot Fries Rub
1.5 cups long-grain or Basmati rice
3 cups chicken or vegetable broth

Ingredients:
Chicken
Chicken - below recipe is portioned for for 1 whole chicken. The same ingredients can be used for chickens halves, chicken quarters, breast, wings, etc.

Ingredients:
4 lbs rice
4 to 5 Lamb Shanks
1.5 tablespoons garlic/ginger paste
1 lb onions
1 lb tomatoes
1 tablespoon Mandi rub
Cilantro bunch
5 green chilli peppers
1 teaspoon Kashmiri red chilli
1/2 teaspoon turmeric powder
1.5-2 L water
A little butter (for searing lamb shanks)
Salt to taste
Cashews for garnish
Directions:
Wash then soak rice for an hour
Marinate lamb shanks in garlic-ginger paste and set aside
Slice onions finely and put in a pressure cooker with some oil and cook for 5 mins
Cut tomatoes finely and add to pressure cooker
Add 1 tablespoon of Mandi rub

Hot Fries Rub adds incredible flavor to salmon. This recipe is easy, quick, and can be made in an oven, air fryer, toaster oven, or grill/smoker (with indirect heat).
Ingredients:
Hot Fries Rub
Salmon filets (skin-on)
1 tablespoon canola oil per salmon filet
Optional garnish: chopped green onions and lime juice
Directions:
Wash the salmon filets under cold water and pat dry
Coat the salmon with canola oil and liberally season with Hot Fries Rub. Let it sit for 15 minutes while oven preheats.
Preheat oven (or air fryer, toaster oven, or grill/smoker) to 400 degrees F

Being born and raised in New Orleans, I had a few opportunities to enjoy Jambalaya (only a “few” since nearly all recipes require pork products).
More recently, I learned Jambalaya may have roots in Muslim history, being related to the Spanish dish paella. Paella originates from the 10th century when rice was first cultivated by Muslim settlers in Spain.
