Question about reheating caramel after it has set

Hello, I am making some caramels that I will dip in chocolate. I think, like most people, I make caramel with a 14oz can of sweetened condensed milk. This makes a fair amount of caramel. My issue is that I only have 30 molds for the candy I am making. If I leave the caramel to set in the molds, the caramel in the pot will have set as well. For now, I have just poured the remaining hot caramel into a container and left it in the refrigerator. I need to know how to reheat the caramel to pour... question about reheating caramel after it has set ..read more

Hello, I have been looking without much luck for a recipe for soft candy canes like the ones from Sweet Stripes or Brachs. I thought they would be like regular pepermint candy with the addition of some butter and flour and cooked to a lower temperature but I have not been able to find much of anything. I have found a couple of recipes for buttermints but these don't look like what I was expecting. Are soft candy canes just a form of buttermint, meaning not cooked at all. Thanks... Nougat question.. help!?!?

Hi. I HOPE this is the correct forum to ask a question about making nougat.. I have tried MANY times to make it (Torrone actually).. and it always comes out too soft/sticky. What can I do to make my nougat more firm or even hard? I've read that whipping your egg whites to stiff peaks is the secret (I didnt have luck w/ this "tip"). I have a decent recipe to make hard candies. However, I am having difficulty infusing enough flavor into it. Particularly Cinnamon. I'm using extra strong oils. The fruit flavors seems to incorporate well enough but the flavor is weak even when I double the amount of oil. The Cinnamon oil does not incorporate at all and instead just floats around on the top and pours off first when I pour the candy. Caramelizing Sugar

Hi Pls is there a way to caramelize sugar without the sugar igetting burnt? I need to mix some flakes in caramelizing sugar. I need to keep the sugar melted while mix or else I would get a good mix and I will get poor binding. If I leave the heat going while mixing, I would get burnt caramelized sugar. So ... I just checked out the candy canes at Walmart because that's the closest thing comparable to the hard candy I want to make, and I realized how cheap they're pushing it. I also realize these companies have machines that are running 24/7 and are making thousands of them in a batch. I'll be making hand-pulled hard candy, by the 20 lb (or close to it) batch. I originally was looking into creme filling, and using starch molds. But then I realized ... I can't stand the stuff. There's a better filling I want to use, but butter is an ingredient. would it work, encased in the chocolate? I know chocolate will keep pretzels, cereal, etc fresh by keeping the air off them ... If it's not possible, is there a substitute that would work and act like butter, without degrading or spoiling because of no refrigeration? When you see someone working a large batch of hard candy. Shaping it, flipping it once in a while, and pulling from one end to stretch it out and start making the candy pieces ... What is the tabletop gas heater that's always on the first table?
