I have the BEST recipe for homemade fudge - it's Paleo and Vegan, healthy and delicious. This is perfect to make for the unannounced guest ("Hey, can we pop in for a quick cuppa?") or last minute 'bring a plate to share' function. Here it is: BLITZ these items (I use my blender): 1/2 cup coconut oil 1/2 cup cacao powder (or cocoa powder) 1/2 cup maple syrup 1 cup walnuts 1 tbsp macadamia oil 2 pinches salt   When finished, stir through 50 grams of our COCONUT SPRINKLES.  I prefer to use either Maple, Himalayan Salt, or Plain.  But, if you prefer to add a bit of extra spice, use ..read more

Do you love Vanilla? Vanilla was one of our original Coconut Chip flavours, and the Vanilla Coconut Chip is our Delicious Food Award winner. We also use Vanilla Extract in our Coconut Granolas, too. WE LOVE VANILLA! In fact, we love it SO MUCH, we recently visited the farmers of Broken Nose Vanilla near Innisfail. Hey Coconut Friend! Did you know we sell coconut bowls? I was a little reluctant at first because we don't make them ourselves (and we pride ourselves on using Australian-grown coconuts, nuts, seeds, and fruits!), but many customers were asking for them. The high cost of labour in Australia means that we simply cannot produce them here (and we don't have the huge coconut production like they do overseas), so I had to think of a solution. A few months ago, we were contacted by the team at Hemingways Brewery Port Douglas about a large corporate event. Hemingway's is awesome because they 1) support local businesses 2) brew delicious beers and 3) have epic sunset views. Before I knew the details, I knew this event was going to be great. After 6 years of making Coconut Chips, it happened. We received our first 1 star review. We've had hundreds of published 5-star reviews and thousands of happy customers. Most of the reviews give me the warm & fuzzies, but this one made me squirm. Here's the review: Bad grammar aside, I was not expecting this. Sweet Chilli is our family favourite and people who like chilli LOVE it. What do I do? Delete the comment and pretend I don't have an unhappy customer? Heck no!
