I do theoretically understand the terms for sure and am aware that they are rather niche techniques when it comes to using them for bulk fermentation say in a craft beer unit. I am not referring to bottle conditioning of beer where priming is a clear consideration) Is there a distinction as to when a brewer might choose to use one between these 2 options ? If a brewer transfers the green beer after active primary fermentation at an appropriate Plato level to a secondary or conditioning tank where he sets the head pressure and captures the CO2 released by the yeast in their lag phase - is this practice called spunding? I typically use liquid yeast and starters, and see a fair bit of activity in 12-18 hrs after pitching. However, just brewed a recipe that strongly recommended using Fermentis US-05 dry yeast. I know I started the rehydration process too soon, but I just read that after 30 min to and hour, the yeast will start to die off without any sugar present. Hey Homebrewers, followed an all-grain Kolsch recipe calling out 10 lbs of Pilsner malt, 4 lbs. 2.7 oz of Wheat malt, and 8.9 oz of Municher malt in grain bill. Followed recipe to the spot, with mash @ 48 degrees for 75 min, then fly sparge @ 168 degrees. The SG was slightly high @ 1.065, but was very happy with that.
