  Those of you who follow Strong Woman know that I had a couple of operations back in May: bunionectomy surgery on my foot and another wee operation on my tummy. Yes, it was a double whammy at the time, but I figured I was off with my foot in a cast so I may as well get the tummy op that needed doing done at the same time.   This photo popped up in my memories from 7 years ago.  It actually made it onto the 1 News weather segment! Jim Hickey read out the weather and next minute there was our photo. It is a fabulous Autumn photo, don't you think?   After many ups and downs with my arthritis at the end of 2020 (see previous blog posts here), finally the arthritis medications were working. The past few months I've been feeling really good, and enjoyed a mostly pain free Summer. Woo hoo!   Perfect with a bevvie on a warm summer night, this tomato salsa recipe is super easy and tastes so much better than the bought stuff! Ingredients: 1/2 green capsicum, finely chopped 1/2 red capsicum, finely chopped 1/3 C cucumber, finely chopped4 tomatoes, chopped, seeds scooped out 2-3 garlic cloves, crushed 1-3 jalapenos, finely chopped (each jalapeno will had quite a bit of heat so adjust to suit your taste buds) Small bunch coriander leaves and stalks, finely chopped Juice of 1 lime Salt and pepper to taste Directions: Combine all of the ingredients together in a ..read more

  Ingredients: 2 punnets of strawberries, leaves removed 1 basil plant or the same amount of leaves as there are strawberries 200g goats cheese or feta, cut into cubes 1-2 tbsp balsamic glaze Toothpicks Directions: Slice the top of the strawberry as you remove the leaves, this will leave a flat base so the strawberries sit nicely on a platter. Wrap a basil leaf around the base of a strawberry, insert the toothpick right through both. Keep pushing the toothpick until it comes out the other end and there is room to gently pierce the cheese.   Lemon lovers, here's one for you. This is your dream recipe. ? Nutritious, tart, naturally sweet, and a total crowd-pleaser….you’re welcome!! Base ingredients: 1C almond meal 1C desiccated coconut 12-14 dried dates 1 tsp vanilla essence A pinch of salt Lemon filling: 6 egg yolks 2 Tbsp honey Zest and juice of 2 large lemons 4 Tbsp of coconut oil 1 punnet of fresh blueberries Directions: Before anything else, cover the dates with boiling water and set aside.
