Did you know that carrot greens are edible? In our test kitchens we started putting them in salads, adapting pesto recipes, and even sautéing them with plenty of avocado oil, a dash of balsamic glaze and lots of garlic, yummy! This carrot-greens pesto lets the entire carrot “shine bright” in taste and presentation like the healthy veggie it is.
Innovative cooks are rediscovering the wide world of leafy greens. Carrot greens are bitter, herbaceous and astringent, with a hint of sweetness in the finish. They are coarse and grainy when raw; the stems taste like celery but are too stringy to use ..read more

I hear you; I hear you! You probably only know radishes in a salad served raw, right? Well my friends, have I news for you. On a recent teaching and culinary exploratory trip to Cuenca in southern Ecuador, I was reminded of a delightful dish I made many years ago and completely forgot about its amazing taste and ease in preparing. The original recipe contained nightshades, so I adapted it just for patients and subscribers. Herb-Infused Roasted Radishes are the perfect side dish anytime. They make a healthy, low carb, nightshade-free alternative to potatoes and so pretty!

Although preventable, cardiovascular disease (CVD) remains the leading cause of death worldwide, accounting for an estimated 32% of all deaths worldwide1. Risk factors of heart disease and stroke include a poor diet, lack of physical activity, smoking, high blood pressure, elevated cholesterol, and being overweight or obese, most of which are modifiable. Many people transition to a plant-based diet to lower their risk for chronic disease as plant-based diets have been repeatedly associated with improved health markers and disease prevention. However, if not done properly, a plant-based diet m ..read more

Everyone has a favorite dessert; mine happens to be tiramisu. AND, although I’ve made dozens of low carb, sugar-free desserts over the years, I have a few favorites. This is my ultimate decadent dessert since the first time I tried it.
Unfortunately, many American restaurants serve a version that is a wet soggy over-sweetened mess with little to no flavor.
