Preheat oven to 400F
Shred/peel apart Lion's Mane into 2 to 4-inch strips resembling pulled pork, spread onto parchment paper-lined baking sheet
Drizzle Lion's Mane with 1 Tbsp of oil, 1 tsp paprika, 1/4 tsp salt, 1/4 tsp cayenne, and two cloves of minced garlic.
Toss around to evenly coat the mushrooms.
Bake for 20 minutes, or until mushrooms are a bit crispy and brown on the edges.
Heat 1 Tbsp of oil in a large saute pan over medium high heat. Transfer cooked mushrooms to pan and add 1/4th cup of BBQ sauce. Stir and cook for 3 to 5 minutes, until mixture is thick and fragrant.

Heat 4 Tbsp oil, butter or ghee in a pot on medium-high heat
Thinly cut pink oyster mushrooms into 3 to 4-inch strips
Add salt to taste and brown mushrooms until crispy, about 10 minutes

Preheat oven to 350F
Shred/peel apart lion's mane into 3 inch long, 1 inch wide strips, salt to taste
Heat skillet on medium high and dry roast the mushrooms to release excess moisture until size is reduced by at least half
Remove Lion's Mane from heat, season with 1/2 tsp smoked paprika, 1/2 tsp cumin, 1 tsp chili powder, 1/8 tsp cinnamon and 1/8 tsp cayenne
Place Lion's Mane onto baking sheet lined with parchment paper and bake for 10 minutes at 350F
Add 2 Tbsp oil to skillet and caramelize 1 chopped onion and 1 chopped red pepper
