Why I Love This Recipe
If I’m being honest, I love muffins because they’re basically cake. ?
These incredibly moist Sourdough Blueberry Muffins have my heart. Bursting with just the right amount of fruit, they’re perfectly sweet, brightened with lemon zest and lemon juice. Their tall and lofty texture is everything you’ve dreamed of, and sourdough discard provides acidity and moisture to give these muffins the softest crumb.
Each muffin is topped with a little extra granulated sugar before baking, which creates a bakery-worthy crunchy, crystal lid that leads to the moist, tender crumb bel ..read more

Why I Love This Recipe:
I crave carrot cake in springtime like I do ginger molasses cookies at the holidays. There’s something about the warm spices, brown sugar, and sweet, fresh carrots that welcomes the turn of seasons and flavors.
With only two of us, a layered carrot cake is too much, so I developed these Sourdough Discard Carrot Bars that make an 8×8 pan of absolute deliciousness that never lasts more than 2 days in this house. They transport well, so I often bring them to gatherings and have yet to bring any home.
The bars are incredibly moist, light, and flavorful. The stars of the sho ..read more

What is a Sheet Pan Soup?
Where I often think of sheet pan meals as those with a blend of veggies and proteins roasted together on one pan, like Sheet Pan Chicken Fajitas, I had never thought of using this common piece of kitchen equipment for soup. Molly Yeh introduced me to this brilliant concept in her cookbook, Home is Where the Eggs Are!
The main ingredients are roasted on one pan in large pieces (no fine chopping to be done), evoking incredible flavor that is later pureed to make a delicious soup. So I started with Molly’s technique and an old Alton Brown butternut squash soup recipe in ..read more

I felt the same way about snickerdoodles as I did about scones; that they were just “meh” (usually too cakey, puffy, and bland).
Until I had one so good it knocked my socks off, because when they’re good, they’re SO GOOD.
Making the Best Gluten-Free Snickerdoodles:
So that’s what you have here; the most heavenly gluten-free snickerdoodles with the chewiest center that melts-in-your-mouth and buttery, rippled edges. This amazing texture comes from using Sarah Kieffer’s pan-banging cookie technique, which I also use in my gluten-free ginger molasses cookies and gluten-free pan-banging chocolate ..read more

For as long as I can remember, my Mom has made Andes Mint Chocolate Cookies for the holidays. My job was always to swirl the mint candy on top after it had melted, a built-in icing that has just the right amount of peppermint to give them a cool and delicious flavor.
This year I worked on and ideal gluten-free version of Andes Mint Cookies to go with the other gluten-free Christmas cookies I make, and am excited to share it with you. This recipe is adapted from Two Peas & Their Pod.
I really wanted the chocolate cookie base to be rich and chewy (the traditional version can lean a little c ..read more

I make several batches of Rhubarb Syrup in Spring, and it makes the best cocktails and additions to sparkling water. I wanted to create something similar for the holidays, so I worked on this fresh, vibrant Cranberry Simple Syrup! It’s very easy to make and ready in 30 minutes.
Cranberries are very tart on their own (just like rhubarb), so they make a great simple syrup because the sugar balances the sour, giving it a well-balanced, pronounced cranberry flavor.
When developing this recipe, I found the ratio of cranberries to sugar to be very important. An equal ratio syrup (1 part sugar, 1 pa ..read more

If you’ve been a reader of Heartbeet Kitchen since the beginning, you might remember that I published a cookbook on all about squash in 2014 – yes, the entire thing is squash recipes, 80 of them!
When writing the book, I discovered sweet dumpling squash from a local farmer and fell in love with its rich, sweet flavor and smooth, creamy flesh. It’s absolutely delicious, and a welcomed difference from the ever popular butternut squash.
In this easy recipe, the squash is roasted in wedges, then drizzled with brown butter and thyme. The brown butter, with golden bit ..read more

At the very end of last Fall, I had one last bundle of tomatoes that needed to be preserved. I had already canned two batches of Fire-Roasted Salsa and Slow-Roasted Cherry Tomatoes Preserved in Olive Oil, plus a batch of sauce. With all the sourdough bread I make, tomato jam seemed like a good idea.
I used Ball Canning and a few different recipes as a starting point; from Food in Jars and Serious Eats. The jam turned out amazing, with the most robust sweet and savory tomato flavor, warmth from a handful of spices, and lemon juice that balanced it all. The simmering time concentrates the essen ..read more

I fell in love with these fluffy, buttery edged, warmly spiced, apple infused pancakes last winter when I was looking for a way to use up a jar of apple butter. And I think you will too! Especially when paired with cozy sweater and mug of steaming coffee.
Apples are humble and ordinary, however I find that any baked good they touch carries on a particular warmth and comfort.
This recipe uses pantry ingredients along with ground cinnamon and a special touch – a pinch of nutmeg, that brings out the best in the apple butter. They’re not too sweet, not-too-spiced pancakes, and easy enough to make ..read more

I love to grill vegetables, and this summer I’ve been hooked on this great recipe for summer squash planks with a herbaceous, bright, and zingy basil vinaigrette.
Besides not having to turn the oven on, I think grilling summer squash gives it the best flavor!
The slight smokiness comes from the interaction of the zucchini with the grill’s heat, which imparts a depth of flavor that you wouldn’t get from simply sautéing or steaming the vegetable. The grilling process caramelizes the natural sugars in the summer squash, and the exterior gets charred and slightly crispy, providing a contrast in t ..read more
