What Thanksgiving dinner would be complete without pumpkin pie! My mom (see sidebar for the rest of her recipes for our zoom Thanksgiving) sent me a bunch of recipes and this one might just – dare I say it – take the cake. Oof. Nancy’s Stuffed Acorn Squash Pre-heat oven to 350 Cut two acorn squash in half, baste with coconut oil on the inside and place on a baking sheet. Bake for about 40 minutes.  Filling: 1 small shallot diced 1C leeks sliced or diced 1/4 cup green onions  2 cloves of garlic finely sliced 1/2 cup crickets and mealworms. Continuing on the recipes my wonderful mom sent me (check the sidebar for the others) – since I won’t be there for Thanksgiving this year, when I asked her for ideas she sent full recipes instead! She’s awesome. Here’s the main dish. I remember having this a couple years ago, this is made so much better by adding the insects!
