Why is my seasoning coming off on my eggs when I cook them

Seasoned with grapeseed oil I use butter for lube. Medium heat, when I turn the eggs over to cook the tops a bit I notice black on the bottom of the eggs. Never noticed this with my other skillets. ETA: It's an old Wagoner pan ..read more

Just something to share--I bought a copy of a book about historical cooking practices and recipes from the 17th century. That's the 1600's. In it there's a drawing of a large cauldron filled with water, with a smaller cauldron containing food sitting in the water inside of the larger one, and a mesh type bag and other items also in the water in the large cauldron, so the food could be boiled at the same time without mixing some of the food items with each other. I'm looking again at the old "butcher kettle" that I restored last year, if I recall correctly it held about 8 gallons of water when I filled it up. Are Chili's too acidic for cast iron? I have been craving this and want to try making it at home. I'd like to use my #12 skillet but don't want to take a chance of stripping my seasoning layer.
