I have been asked many times if these bhajis can be made successfully in the oven and I finally had some time to experiment. This is a great spice kit to have in the kitchen as the bhajis can be mixed in minutes and take only a short time to cook. This is not really a recipe as such as the mix instructions are the same as on the packet but for the best results for cooking, you will need;   The oven heated to 160 degrees  A metal mini muffin tin, the silicone ones don't work as well for this. Okay a bit of a mouthful as names go but it's a damn tasty mouthful too! It uses our gluten free Fried Chicken Mix that despite it's name is completely suitable for vegetarians and vegans so you too can have a go at doing 'Fried 'whatever you like'. This recipe uses our Goat Curry Mix but as some people tell me at eventst hey can't quite bring themselves to eat goat meat, I wanted to show that this works equally well with chicken as an alternative. In fact it goes well with just veggies but I'll do that one another day. I have included a recipe for Rice and Peas in a separate blog post to accompany the Curry. This is a really quick and tasty Satay sauce, perfect to dip our Nut Rub Satay Chicken into. (See earlier blog post). We are always happy to take requests, for blends that is and I was asked for a bhaji mix. Fast forward a few weeks of tests and trials and here it is. Feedback has been amazing so we hope you love it too. The mix makes approximately 6 medium bhajis. Carefully heat a fryer or a saucepan half filled with vegetable oil to 180 degrees.
