This easy teriyaki chicken fried rice is packed with veggies and juicy pineapple, and tossed with a sweet and savory homemade teriyaki sauce.
There’s a specific point every summer where my brain just clocks out. It usually starts about 2 weeks before our annual one-week family vacation, and gets progressively worse as it gets closer.
Basically, right when I should be hustling to get as much work done as possible so I can relax for a week, I do the exact opposite. I slack off in every way I can, and this most definitely includes dinner.
Sometimes we all eat oatmeal for dinner. But if I can wor ..read more

Whip up this 6-ingredient sweet and creamy, strawberry raspberry smoothie in 5 minutes to make the most of juicy summer berries! Its a refreshing and nutrient-packed treat perfect for any time of day.
This might be a bold claim, but I really believe smoothies are one of the very best things ever invented. Like, sliced bread level good. How can something so creamy, so sweet, so satisfying, be so good for you, AND so easy and quick to make?

If I have chicken in the refrigerator, it’s these chicken tacos with cilantro lime slaw, and if I have be ..read more

As a serious fruit lover, summertime makes me downright giddy. Say ‘goodbye’ to dry and mealy, and say ‘hello’ to ripe and juicy!
I love to use summer fruits every which way I can, from baking (see blueberry loaf cake, peach blueberry crisp or roasted peaches with pistachio crumble), to salads (Mexican watermelon salad, strawberry goat cheese salad ) to grilling (strawberry halloumi salad).
And everything in between (ie. snacking!)
Which brings us to this ..read more

Simple summer dining at it’s finest, this grilled balsamic chicken salad is juicy marinated chicken on a bed of arugula, burrata, and tomatoes with a tangy balsamic dressing.
Salads are one thing that are almost always on my table no matter the time of the year. From this kale pomegranate salad and sweet potato feta salad in the winter to this Mexican watermelon salad and Mandarin chicken salad in spring, I like to switch it up depending on the season and the fresh produce available.
Basically, if I want everyone to eat salad, I have to make sure it isn’t boring, and this balsamic chicken sa ..read more
