I’ve lived in Western Connecticut my entire life, but the drive through my home state’s northwest corner always impresses me with its natural beauty, winding roads, and quaint towns. My GPS estimated a 57 minute drive door-to-door from my house to Tenmile Distillery, just minutes over the border in the hamlet of Wassaic, NY. With so many distilleries out there and so little time, the physical proximity of Tenmile to my location was a huge contributing factor to me paying them a visit in the first place. American distillers have been turning their attention to single malts, defined in Scotland as whisky produced in one distillery from 100 percent malted barley. In the United States these rules are usually followed, but have yet to be mandated by government regulators; it should happen soon. In Wassaic, N.Y., in the Hudson Valley, John Dyson is betting on the appeal of American single malts at his Tenmile Distillery.

When it comes to single malt whiskey, America has been, fittingly, like the Wild West. Sure, there are some basic rules that everyone follows—the whiskey must be produced from malted barley at a single distillery in the United States—but after that things have been wide open.
Unlike in Scotland and Ireland, which have laws governing whiskey production, the U.S. doesn’t regulate how long a spirit has to be aged, what kinds of barrels can be used, or how it can be matured.

Whisky devotees descended upon the New York Marriott Marquis on November 9th for this year’s WhiskyFest New York, a gathering that delivered drams, a bagpipe performance, and even a famous face. Over 300 whiskies were on offer throughout the night, in many cases accompanied by their distillers, blenders, and owners.
