Nigella’s Chocolate Chip Muffins
Double the chocolate and double the yum – these are hands down my favourite muffins. They’re quick, easy and require just a handful of pantry staples. Everyone will go nuts and/or bananas for these delicious peanut butter and banana mini loaves.
Lately we’ve been very big on bananas. Ever since the start of the year – we’ve been having a banana a day. You see, David had a mystery tummy bug over Christmas which really knocked his stomach for six and I read somewhere that bananas are good for gut health.

Part choc cross bun, part fudgy brownie – these double chocolate brownies are a decadent and delicious Easter treat!
Now I know I just posted a recipe for zucchini brownies what seems like 2 minutes ago (actually it was a few weeks) but this recipe is just too good not to share. Besides, let’s face it, there’s no such thing as too many brownies!

These zucchini brownies are rich, fudgy and delicious. Veggie smuggling has never tasted so good!
I know that having lived most of my life in the UK that I really should be calling those little green gourds courgettes but I just can’t bring myself to do it. That said, I was today old when I found out that zucchini is plural and that apparently one zucchini is a zucchino! Go figure!

Everyone will go nuts for this lovely light sponge finished with a crunchy walnut topping.
To be honest, I haven’t baked much of anything over the last couple of months as moving has taken up almost all of my time. However, once we got to the new house, I was desperate to try out my new oven and there was no better excuse than the imminent arrival of my in-laws (whom I lovingly refer to as my outlaws.)

This baked lemon cheesecake made with cream cheese and ricotta is the light fantastic!
I love all dessert but cheesecake holds a special place in my heart. I don’t think I’ve ever met a cheesecake that I didn’t like although if I had to choose between a baked and a non baked cheesecake, I’d go baked every time… In the event that I couldn’t have both obviously!

This simple 4 ingredient smoked mackerel dip is quick, easy and totally delicious!
