Hello, I'm very interested in working in a roastary this summer but I'm not sure how I would start looking. I'm 21 and I live in North Jersey so there are a decent amount of local roasters in my area I have a pretty good understanding that it's hard work and theres no glamour (I've worked as baker assistants so I get spending hours in a 100°F room, constant standing, etc.) but I have a passion for coffee and it's something I'm intersted in. Hello everyone! I’m in the process of planning a cupping “lab” for our roastery that allow us to cup coffees without having to bring out the collapsible picnic table every time we want to assess coffees. I’d like to get your opinions on what you’ve found works for you and what doesn’t. “Must haves” and “Don’t bother” sort of tidbits would be amazing. We have water connections and ample electricity for a boiler that will supply on demand (temp controlled) water which I’m very excited by! Roasting in a wok, with hot air gun

Hey everyone, so I am very new to roasting and would appreciate any feedback you all may have. I’m currently roasting on a wok with a silicone wire whisk. I’ve been getting okayish results using a half pound of beans and taking it to full city, but have had prolonged first crack ranges. Recently got a heat gun and noticed how much faster I can take the 1/2 lb of beans to dry end without scorching etc. my plan was to basically dial back the heat from my induction stovetop and use it as background heat to minimize scorching, while using the heat gun as my main driver. Roast Issues or Bean Defects?

I just got some Guatemala Huehuetenango beans and roasted them up for the first time. I've never roasted any Guatemala beans before, and this is a new green bean provider for me. The beans on the left is a random sampling of the finished roast. In the middle are some lighter beans that I picked out. And on the right are some odd looking beans I found in the finished roast, where it looks like they're opened up super wide or are missing parts of them. I've never seen that before in any of my previous roasts of other beans. And I didn't see any like that in the green beans, but maybe I did ..read more
