What is Paella? Not everything can be defined, but here is the simple definition: pa-el-la /päˈāyə/ noun a Spanish dish of rice, saffron, chicken, seafood, etc., cooked and served in a large shallow pan. Paella or the la paella is the name of the cooking pan itself and not the actual dish. Paella pans come in all kinds of sizes. If you don’t have one a Dutch oven can also do the trick. Paella was originally a dish of farmers and commoners, basically a rice dish consisting of whatever was on hand, blended & cooked in a shallow pan. It could be as simple as rabbit and snails combined with lo ..read more

“Of all the dishes in the realm of Louisiana cooking, gumbo is the most famous and, very likely, the most popular. Gumbo crosses all class barriers, appearing on the tables of the poor as well as the wealthy. Although ingredients might vary greatly from one cook to the next, and from one part of the state to another, a steaming bowl of fragrant gumbo is one of life’s cherished pleasures, as emblematic of Louisiana as chili is of Texas.” From: A SHORT HISTORY OF GUMBO by Stanley Dry Just like making a pot of chili, keep this in mind when making gumbo, measurements do not have to be exact, ingre ..read more

Seafood Seasoning Oyster Parmesan

Living in Key West we get our fair share of oysters that make it down our way from Apalachicola and points beyond. I love fresh shucked oysters on the half shell and sometimes we’re in the mood for the bivalve molluscs hen cooked on the grill. There are so many ways to do grilled oysters. The most famous would have to be oysters Rockefellers with spinach and a rich buttery sauce. Topped with tablespoon of collard greens always seems to work too. BBQ with your favorite sauce, a little cheddar cheese and a piece of pork or Canadian bacon. Sometimes a simple Seafood Seasoning oyster Parmesan does ..read more

Those were the words of Kermit “Shine” Forbes. It really didn’t matter what time of the year it was. Shine would walk up and down Petronia Street in Bamaha Village and in his manliest of all men’s voices, would say “Goombay’s Coming!” The Goombay Festival marks the beginning of Fantasy Fest, the island city’s 10-day masking and costuming gala famous the world over. I like to think of it as the local’s weekend. Every year on the Friday and Saturday night of Goombay weekend, Petronia Street is transformed into a Caribbean Street Fair. The same time every year, it’s our chance to say hello and ca ..read more

September welcomes Football and cooler weather, and both of those play well with BBQ. Growing up tailgating was synonymous with cooking outside. One of our favorite ways to cook outside is to Barbecue. Barbeque aka BBQ is cooking long, low and slow. The way life should be, after all who’s got time to be in a hurry anyway. Whether you have a Weber kettle, Weber Smoky Mountain (bullet type), Big Green Egg or even better one of those serious custom smokers, it’s easy keysey easy! Love all types of BBQ, whether it be beef, chicken, pork, but my favorite when it comes to share has to be ribs. Meaty ..read more

If you were to ask someone to tell you their favorite season of the year, your most common responses would be summer, winter, spring or fall. Being the Southernmost island in the continental United States, some people say Key West doesn’t have seasons like everywhere else. You know they are right, we don’t. Instead we have things like Lobster Season, and it’s the most wonderful time of the year. There are two Florida Lobster Seasons, the 2 day mini season and the 8 month regular lobster season. The mini lobster season always falls on the last consecutive Wednesday and Thursday in July. August ..read more
