January 2023 Ingredients: 1 yellow onion, chopped 1 shallot, chopped 4 Tbsp olive oil 1 clove garlic, minced 2 red bell peppers, sliced 1 orange bell pepper, sliced ½ pint cherry tomatoes, cut in half 2 cups uncooked long grain white rice 2 teaspoons Pallero seasoning 4 cups water 2 Tbsp parsley, finely chopped Salt Pepper Instructions: Preheat the oven to 400 degrees.
