Unfortunately, many restaurants shut down permanently due to the pandemic.  However, food trucks are not slowing down in Memphis. I am an omnivore but every once in a while I just want to eat something vegetarian and by vegetarian I don’t mean carbohydrates although carbohydrates is my weakness.  I love this vegetarian dish because it is versatile, can be adapted to what you have in the pantry or the fridge and can also easily be made vegan as it’s just the toppings and/garnish that need to be subbed out for their vegan counterparts. My kids’ number 1 favorite dish is macaroni and cheese.  If I let them, they would eat it every day.  They order it every time it is on the kids’ menu at restaurants and I hate seeing the Kraft symbol next to it in the menu. Scrambled eggs are eaten several times a week at my house because my kids love them and they are an easy source of protein for my picky eaters.  Scrambled eggs sound easy enough, until I tried the Gordon Ramsay method for cooking scrambled eggs.
