    Today we’re gonna talk about some beans! Mesquite beans to be exact. They get called all sorts of names in ranching circles: water guzzlers, trash trees, toxic plants and spiny tire monsters! (Okay, I made up that last one) Mesquite gets a bad rap as a water thief, and is said to be gulping up needed water for surrounding plants and grass. Choosing between Quarter vs Half Cow?

I hear from a lot of customers who are stuck between trying to decide between a half cow or a beef quarter. At a glance it may just seem like the only difference is amount of beef received, but there’s a little more to it. Half/Whole Cow A half cow (a.k.a side of beef) is priced out by hanging weight. We take the cows to the butcher, they remove all the inedible parts (hide, hoofs, inedible organs, etc) and the remaining weight before it’s cut down is what you pay for.  When Bastrop Cattle Company uses the word “Local” we mean it! Yes, our beef is local.  You know that!  Our cattle are raised between four family ranches within a two county area of Central Texas.  But there is more to “Local” than just that.   We made a delicious grilled sirloin with brussel sprouts! It was heavenly.   Well, we have just hit the hottest part of summer and all I can think about is ‘when is the fall showing up?’  It’s almost unbearable to do things in the heat except refill fresh water in the troughs for the cows. I know they appreciate it though! They sleep and relax under the shade near the house, getting fresh drinks from us. We’re practically running a resort. So the cows have gone dormant!  I don’t mean I’ve put them in cold storage (though they may like that!). but rather, they have flipped their grazing cycle.  The herd wanders up to the house around 7:30 or 8 am to drink lots of water (we run fresh well water for them constantly), then they lay down under the trees and half sleep and chew their cud.  They will shake themselves out of their self-imposed lethargy throughout the day to nibble some grass, get another big gulp of water and lay down again.  Then about 7 pm they rise in mass and start grazing in earnest.  This ..read more
