It’s my favourite way to eat this glorious vegetable. I usually use a mixture of chickpea flour and cornflour in the batter and you have a pretty free hand with the spices. Cumin, coriander, chilli powder, turmeric, smoked paprika and garlic are delicious (especially when combined). Deep-fry at 180℃. All kinds of vegetable yum.
