You’ve heard all about and seen the “Marry Me Chicken” well now it’s time to taste my Chicken & Greens!! A dish that feels so very creamy and cheesy but actually a simple sauce made with milk, flour and little bit of butter makes this Chicken & Greens dish very moreish! Give it a spicy kick with some chorizo or nduja or even more punch. Keep it mellow with some bacon or use up leftover ham. Turn it veggie by replacing the chicken and bacon for chickpeas or lentils and adding in some smoked paprika instead of the bacon. Turn it vegan by replacing the milk with coconut milk. Makes 12 flapjacks. 50g nut butter 2 tbsp honey or maple syrup 200g oats 60g unflavored or vanilla protein powder 50g desiccated coconut 100ml milk 1 tsp sea-salt 100g dark chocolate 1 tsp coconut oil Optional extras: 50g chopped nuts, 50g mixed seeds, 25g cacao nibs ..read more

Ice-cream is honestly one of the loves of my life!! Adore it in many many forms and also love to make it. Now, don’t you worry!! No fancy machinery required here only a freezer, some gorgeous fresh cream, berries and one or two other things. Since Summer is berry season, now is the time to make the most of them! I’m adding them to all kinds of dishes even a Summer Breakfast salad was created recently with scrambled eggs, tomatoes, greens and strawberries – it was magic alongside a sunny sea view. Back to ice-cream, for more inspiration try my classic No-Churn Ice-cream recipes. Makes 1 large t ..read more

Chilli & Peanut Spaghetti Salad

Yes spaghetti in a salad!! Hear me out, noodles are often served in an Asian style salad so why not spaghetti?? I’m sure the Italians are not so impressed with my use of spaghetti but sure look it tastes good! The key thing to spaghetti for me is the sauce that goes with it. Yes I would be in the camp that a knob of butter on top of spaghetti is a sauce. The recipe title I hope gives you the direction this spaghetti sauce went in. Chilli and peanut a winning combination in so many dishes and here combine in an epic summer salad. For the vegetables, use whatever you fancy or have easily on hand ..read more

Yoghurt is a bit of a daily staple for me. It appears most mornings in my breakfast bowl alongside fruit and granola. Regularly as a snack. Then yoghurt could feature again in a marinade for some chicken or stirred into a curry to create some extra creaminess! I recently had a little too much yoghurt in my fridge and wondered could I make a cheesecake with it. The answer I am very happy to share is yes. Yes you can!! So along came this Baked Yoghurt Cheesecake. I hope by now you have cottoned on that I like to eat and cook with the seasons. This recipe is no different – it works really well wi ..read more

Ok so these are goooood!!! I created them for my cookery demonstration at WellFest 2023 in collaboration with Glenisk!! There are thankfully lots of amazing Irish yoghurt brands out there but Glenisk have my heart. I have been creating with them since the very start of my food sharing adventures through Delalicious and the entire team have been a phenomenal support to me. You will definitely have some leftover caramel….DO NOT THROW IT AWAY!! Pour it into a clean jar, seal and store in the fridge for drizzling over lots more things – cakes, buns, another batch of brownies, cookies, swirl into p ..read more

You doesn’t love a roast dinner?? This Cheesy Cauliflower Gratin will be the perfect addition to a roast dinner, a midweek feast with some simple chicken, beef or fish or turn it into a full dish with added pasta or chopped chicken pieces. I made this recently for the Mother’s Day lunch I cooked in the Ronald McDonald House in Crumlin Hospital and it went down a storm. I wanted to create a comforting feast that an entire family would love. Alongside the cauliflower gratin, I served slow-cooked brisket, rosemary and sea-salt roast potatoes and a seasonal slaw. For my cauliflower inspired recipe ..read more

Savoury scones with some of Ireland’s finest ingredients in time for St. Patrick’s Day!! Dairy for me goes hand in hand with Irish food. Of course we make cheese and white cheddar is one of the most eaten and versatile of Irish cheese. Wild garlic is only around for a short window every year but what a punch of flavour it adds to any dish. Wholegrain flour and oats are grown and milled in Ireland by some of the finest millers and growers. If you can’t get your hands on wild garlic substitute in some finely sliced spring onion, pesto or fresh leafy greens like kale or spinach. I’m using BiaSol ..read more

Honestly I think these sausage rolls epitomize some of the best of Irish food! We love a sausage roll! Every deli and cafe counter in the land is heaving with them and ask anyone and they will tell you their favourite place to scoff one. We don’t just make great sausage in Ireland but also black pudding which is one of the original zero food waste items. We also grow incredible apples. So I basically put them all together and the flavours worked perfectly! For more apple recipes try these or my Black Pudding, Goats Cheese and Blackberry salad. Makes 8 generous rolls. 1 roll of shop bought puf ..read more

Lentil Ragu & Celeriac Bake

If you’re following me on social media, you might have seen I’m doing a press and freezer clear-out! A big bag of brown lentils have been lying in my press for too long, plus I had a hankering for lasagna and a sorry looking celeriac in my fridge. So along came this recipe. The lentil ragu could be made meaty by simply replacing some or all of the lentils with the same amount of minced meat of your choice. I often do a 50:50 too. If like me you have a bag of lentils lying around, try out these recipes to use up the rest of them!! Or these Stuffed Red Peppers which are incredible too. Serves 6 ..read more
