Susan Jane White

For readers who feel that Christmas is pathologically upbeat and designed to tripwire our adrenal glands, or indeed readers for whom Yuletide cartwheels through their veins with a side of Bing Crosby, here are seven easy ways to ensure that we beat the bloat and prevent our personalities from imploding. Fa la la la lahhh … (1) When plotting a banquet of extraordinary excess, digestive enzymes are your friend. Udo’s Choice and Solgar are my top two brands, available at pharmacies and health food stores nationwide. Apple cider vinegar can also assist with indigestion and the priapic excesses of ..read more

Lunchbox Brack
Susan Jane White

Some get theirs following Wim Hof into iced water. Others rely on several espressos. The sensible among us find it hiking in nature. But I get my high from sneaking vegetables into family favourites. And brack is no exception. My boys eat thick slices of brack at a speed that would rival a half-price sale at JD Sports. This made brack very vulnerable to a make-over, and a sly introduction to my Veggie Dance. The result? Beetroot bombed. Parsnip wheezed. And courgette flopped like an exhausted backing dancer. Finally I figured we needed a sweet and spicy groove, the Fred Astaire and Ginger Roge ..read more

Cinnamon Oat Bombs

I asked a paediatrician recently what the most common condition children presented with each week at ER. Constipation. Seriously! Gastroenterologists – the specialists who look after our pipes – recommend that children ideally get around 25g of dietary fibre every day. This week’s oat balls will help your little one do exactly that. Expect bowel movements to be practically Instagrammable. There are two types of fibre chillaxing inside each oat flake and flaxseed. Soluble fibre is a gift for the gut, and works by helping to normalise bowel movements and balance blood sugar levels. The other typ ..read more

Zero Waste orange, cardamom & Ginger Cake

Here’s a zero-waste cake with financial, nutritional and earth-friendly benefits. (Was that a backflip?) It’s basically the lovechild of Claudia Roden’s legendary orange cake, and Tom Hunt’s vegan twist. By adding the skin of the orange, we’re mainlining bags of antioxidants, vitamin C and fancy polyphenols for our body to enjoy. Besides, adding the whole orange makes it taste like a badass marmalade cake. It’s a win-win situation. But instead of eggs, we’re using aqua faba to keep our vegan friends happy and for extra sustainability points. Aqua faba is the soak liquid from a tin of chickpeas ..read more

Home Made CHai SPice
Susan Jane White

Chai is an orgy of healthy spices that has become a sensation across certain postcodes of Cork and Dublin. Here’s why. There is ginger to warm your tonsils; cinnamon to ignite your toes; nutmeg and clove to heat your insides; and cardamom to excite your synapses. Chai coffee is my winter battery. I just add a pinch to my French press, and let the spices perform acts that only a defibrillator could rival. A teaspoon of chai will also dazzle crumbles, cakes and bakes. We love it sprinkled on top of foamy hot chocolates with some crunchy cacao nibs and woolly socks by the fire. Or packed into din ..read more

Christmas for Vegetarians
Susan Jane White

The mere mention of Yuletide normally has me sweating sequins. I hate feeling like a week-old party balloon before Santa even arrives. So I prep my Christmas menu in advance, and massage my synapses with an extra large vermouth. Vegeterian favourites include dishes like Beet Bourguignon, and buckwheat blini & beluga lentils . These mushroom-based scallops are out of this world, and will rock December 25th for vegans and carnivores alike. For my GF and vegan friends, you’ll find a recipe for irresistibly-easy Florentines here. And my wholefoodie Christmas Cake, using W.B.Yeats’ favourite te ..read more
